Macarons (not be be confused with coconut macaroons), are a traditionally French confection comprised of two almond and merengue-based cookies (shells) with any assortment of fillings smooshed between them like a sandwich.

What is a bonbon?

Bonbons (or as I call them Macajohnbons) are basically a sweet composed of a chocolate shell filled with a variety of things like caramels, ganaches, nuts, or fruit jellies. They're also particularly known for having a super shiny decorative exterior due to the tempering of chocolate used in their creation process.

For one of my holiday flavors this year I decided on trying out using pine as an ingredient, and found that citrus flavors pair well with it so I decided on these lemon-pine macarons! I found a pine needle tea that I made a jelly out of, and then made a lemon ganache with some added mugolio (a type of pine cone syrup) for an extra pine layer. Overall I’m really happy with these ones! Hope everyone has an amazing holiday season 🎄

I got a sous vide machine recently and have been absolutely obsessed with it and all the things I can make with it now, one of those being wine poached pears which inspired these macarons. So I’m still playing around with bonbons, things have gotten pretty busy for me lately working towards my PhD candidacy exam and they’re a bit less of a time sink than macarons are haha. I decided to make some pride bonbons while it’s still the season, they’re a milk chocolate shell with a coffee-marscarpone ganache and a raspberry jelly! I’m still playing around with different decoration techniques but the multitude of colors was pretty fun. I do have some pride macarons that I’m super excited about that I’ll probably have to save to bring out next year though!

Merged my love of both macarons and molecular gastronomy for this particular combination! It’s a pomegranate macaron with a hidden pod of pomegranate juice that bursts when you bite into it! The design of the macaron are interpretations of the two compounds used in the pod formation process: calcium lactate and sodium alginate!
